Easy Pregnancy Friendly Tiramisu

There are so many restrictions before, during and after pregnancy. In addition to the nausea, swelling, hormonal changes, pimples, not fitting in your favourite jeans and constant hunger, we also have to deal with a ridiculous amount of "you shouldn’t eat that" or "that's not good for the baby" remarks (usually unsolicited 🙄) to keep our bubs healthy and safe.

Life is too short to not have some delicious tiramisu, even while pregnant! Try out our recipe below.

Prep Time: 20 minutes

Mixing Time: 5 minutes

Total Time: 25 minutes

Additional Time: 4 - 24 hours

Ingredients

350ml x Ultra Low Caffeine, cooled

250ml x Double Cream

250g x Mascarpone, softened

50g x Granulated sugar

1 tsp x Vanilla Extract

24–28 x ladyfingers (Savoiardi/Boudoir) the number of biscuits will depend on your tray or dish size

2 tbsp x Unsweetened Cocoa Powder

Method

Beat double cream until medium-stiff peaks form. Set aside.

Mix the mascarpone, sugar, and vanilla until combined. Add in the whipped double cream.

Use a spatula and fold the mixture a few times scraping the bottom and sides of the bowl. Then use the electric mixer to beat again until smooth.

Dip each ladyfinger for at least 3 seconds into the Ultra Low Caffeine Coffee. Do not over soak or the ladyfingers will break and be soggy.

Line your tray or dish with a layer of Ultra Low Caffeine Coffee covered ladyfingers. Spread half of the cream mixture over the ladyfingers.

Repeat another layer and chill for a minimum of 4 hours or overnight.

Dust with cocoa powder before serving.

Storage Directions

Tiramisu can be stored in the fridge for up to 4 days or frozen for up to 3 months.
